A simple fruit jelly recipe that demonstrates the use of either agar powder or gelatin powder to set fruit juice into a refreshing, chilled dessert — vegan when made with agar.

Ingredients

2 cups fruit juice (such as apple or grape)
1/4 cup granulated sugar (optional)
1 teaspoon agar powder OR 2 teaspoons gelatin powder
1 tablespoon lemon juice (optional)

Instructions

In a small saucepan, combine the fruit juice and sugar and heat over medium heat until the sugar dissolves.
If using agar powder, sprinkle it over the juice mixture, whisk, bring to a boil, then reduce heat and simmer 2–3 minutes until fully dissolved.
If using gelatin, sprinkle it over 1/4 cup cold water in a small bowl and let it bloom for 5 minutes.
After the juice mixture is warm, remove from heat and stir in the bloomed gelatin until dissolved; if using agar, proceed after simmering.
Stir in the lemon juice if using for brightness.
Pour the mixture into molds or a shallow dish and refrigerate until set (1–2 hours for gelatin or about 30 minutes for agar).
Once fully set, unmold by dipping the mold in warm water for a few seconds and invert onto a plate.
Serve chilled and enjoy.

Notes

Avoid adding fresh pineapple, kiwi, or papaya as they contain enzymes that prevent gelatin from setting.
Serve chilled and garnish with fresh fruit or a dollop of whipped cream if desired.
