- Bring a large pan of well-salted water to the boil and cook the macaroni for two minutes less than the packet says. It finishes cooking in the oven, and pasta drained at the stated time turns soft and swollen by the time the cheese has melted. Drain it and leave it in the colander.
- Heat the oil in a wide frying pan over a high heat and add the mince in one layer. Leave it untouched for three or four minutes before breaking it up. That contact with hot metal is where the browned flavour comes from, and stirring straight away steams the meat grey instead.

Shredded iceberg dressed in nothing but lemon and salt works even better, because the crunch is closer to what you would get in a burger. Quick pickled red onions, left in vinegar for twenty minutes while the casserole bakes, are worth the small effort.
