Ingredients
1 whole turkey (12-14 lbs)
1/2 cup unsalted butter, softened
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme, chopped
4 cloves garlic, minced
1 lemon, halved
1 onion, quartered
Salt and black pepper to taste
4 cups chicken broth
2 tbsp all-purpose flour
Instructions
Preheat oven to 325°F (165°C).
Pat the turkey dry and rub with softened butter, rosemary, thyme, garlic, salt, and pepper.
Stuff the cavity with lemon and onion quarters.
Place turkey on a rack in a roasting pan and pour chicken broth into the bottom.
Roast for 3-4 hours, basting every 30 minutes, until internal temperature reaches 165°F (74°C).
Remove turkey from oven, let rest for 20 minutes before carving.
For gravy, skim fat from pan drippings, whisk in flour, and cook until thickened.
