Ingredients
1 packet (2 1/2 teaspoons) unflavored gelatin
1/4 cup cold water
3/4 cup boiling water
1/4 cup granulated sugar (optional)
1 teaspoon vanilla extract or lemon juice (optional)
Instructions
Sprinkle unflavored gelatin evenly over cold water in a bowl and let bloom for 5 minutes until spongy.
Slowly pour boiling water into the bloomed gelatin while stirring gently until fully dissolved and clear.
Stir in sugar if using, mixing until completely dissolved.
Add vanilla extract or lemon juice if desired and stir gently.
Pour mixture into a lightly moistened mold or serving dish.
Refrigerate for at least 4 hours or until fully set.
To unmold, briefly dip the mold in warm water, invert onto a plate, and serve chilled.
Notes
For extra clarity, skim any foam from the surface before chilling.
Store covered in the refrigerator for up to 3 to 4 days.
