Ingredients
13.5 ounces coconut milk
1 tablespoon agar agar powder
1/2 cup water
1/4 cup sugar
1/2 teaspoon salt
1 large dragon fruit, peeled
1.5 cups water

1/3 cup sugar
1.5 cups liquid of choice (water, coconut water, or floral water)

Instructions
Whisk 1/2 cup water with 1 tablespoon agar agar and let bloom for 5 minutes.
Add coconut milk, sugar, and salt, then bring to a gentle boil while stirring until agar dissolves.
Pour coconut mixture into mold and allow to partially set.
Blend dragon fruit with 1.5 cups water until smooth.
Bloom agar agar with 1/2 cup water, then add dragon fruit puree and sugar.
Bring to a gentle boil, stirring until agar dissolves.
Pour dragon fruit layer gently over coconut layer and allow to set.
Bloom agar agar with remaining 1/2 cup water.
Add chosen liquid and sugar, bring to boil until agar dissolves.
Pour clear layer over fruit layer and cool completely.
Refrigerate for at least 2 hours until fully set.
Slice and serve chilled.
Notes
Let each layer cool slightly before adding the next to keep layers defined.
Best consumed within 48 hours for optimal texture.
