Ingredients
1 package unflavored gelatin
2 cups water
1 tablespoon honey
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
Optional: Fresh berries for topping
Instructions
Pour 1 cup of cold water into a bowl and sprinkle the gelatin evenly over the surface. Let it bloom for 5 minutes.
Heat the remaining 1 cup of water until warm but not boiling.
Add the warm water to the bloomed gelatin and stir until fully dissolved.
Mix in honey, lemon juice, and vanilla extract until well combined.
Pour the mixture into a mold or individual serving cups.
Refrigerate for at least 2 hours or until set.
Top with fresh berries if desired.
Serve chilled and enjoy as a healthy snack.
