3 oz strawberry flavored gelatin
2 cups cottage cheese, small curd
20 oz canned crushed pineapple in juice, drained (reserve juice)
1/2 lb fresh strawberries, chopped
1 cup cold heavy whipping cream
1 tsp vanilla extract
2 Tbsp granulated sugar

Instructions

Wash, stem, and quarter strawberries; cut large pieces smaller for uniformity.
Drain crushed pineapple in a strainer, reserving juice separately.
In a blender, combine strawberry gelatin, cottage cheese, and 1/3 cup reserved pineapple juice. Blend until smooth.
In a chilled bowl, whip the cold cream, vanilla, and sugar with a mixer until stiff peaks form.
Fold whipped cream into the blended gelatin mixture using a silicone spatula.
Add chopped strawberries and drained pineapple, gently folding to combine.
Transfer mixture to a serving dish, cover, and refrigerate for at least 2 hours.
Serve chilled from a bowl or in individual portions.

For a smoother texture, blend cottage cheese longer before adding whipped cream.
Swap strawberries with raspberries or blueberries for variation.
Avoid freezing—texture may separate due to the whipped cream.
