Ingredients
1 1/2 cups all-purpose flour
1/2 cup cocoa powder
1 cup granulated sugar
1 tsp baking soda
1/2 tsp salt
1 cup almond milk
1/3 cup vegetable oil
1 tsp vanilla extract
1 tbsp apple cider vinegar
10 Oreo cookies, crushed
Instructions
Preheat the oven to 350°F and line a muffin tin with paper liners.
In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt.
Add almond milk, vegetable oil, vanilla extract, and apple cider vinegar to the dry ingredients. Mix until just combined.
Fold in the crushed Oreo cookies, reserving some for topping.
Divide the batter evenly among the muffin cups, filling each about 3/4 full.
Sprinkle the reserved crushed Oreos on top of each muffin.
Bake for 20-25 minutes or until a toothpick inserted comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring to a wire rack.
