Creamy gelatin-free panna cotta made with agar agar for a delicious vegetarian twist on the classic Italian dessert.

Ingredients

2 cups heavy cream
1 cup whole milk
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 teaspoons agar-agar powder

Instructions

In a medium saucepan, combine the milk and agar-agar powder and let sit for 5 minutes to bloom.
Place over medium heat and stir constantly until agar-agar fully dissolves.
Add the heavy cream, sugar, and vanilla extract; continue stirring until sugar dissolves and mixture is hot but not boiling.
Remove from heat and pour into serving glasses or molds.
Cool to room temperature, then refrigerate for at least 4 hours or until fully set.
To serve, run a knife around the edges to unmold or serve in glasses with fresh berries or sauce.

Notes

Do not use fresh pineapple, kiwi, or papaya as they prevent agar from setting.
Serve chilled with fresh fruit or whipped topping if desired.
