Ingredients

1 packet (about 2 1/2 teaspoons) unflavored gelatin powder
1 cup cold water, divided
1/4 cup sugar
1/4 teaspoon pink Himalayan salt
1 teaspoon vanilla extract (optional)
A drop of pink food coloring (optional)

Instructions

1. In a small mixing bowl, sprinkle the gelatin powder over 1/2 cup of cold water. Let it bloom for 5 minutes.

2. In a saucepan, combine the remaining 1/2 cup water, sugar, and pink salt. Heat over medium heat, stirring with a silicone spatula until dissolved.

3. Remove the saucepan from heat. Gradually pour the hot mixture into the bloomed gelatin, whisking vigorously with a wire whisk until fully combined.

4. Stir in vanilla extract and a drop of pink food coloring if using, using a rubber spatula to scrape the sides.

5. Pour the mixture into a serving dish or molds. Refrigerate for at least 4 hours, or until set.

6. Once set, use an offset spatula to loosen the edges and unmold onto a plate. Serve chilled.
