Ingredients

2 teaspoons agar agar powder
2 cups water
1/4 cup sugar (optional)
1 cup fruit juice (such as apple or berry)
1 teaspoon vanilla extract (optional)

Instructions

In a small saucepan, combine agar agar powder with water and let it sit for 5 minutes.
Place saucepan over medium heat and bring to a simmer, stirring constantly to activate the agar.
Add sugar (if using) and stir until dissolved.
Remove from heat and stir in fruit juice and optional vanilla extract.
Pour mixture into molds or a baking dish.
Allow to cool to room temperature, then refrigerate for at least 2 hours until set.
Unmold or cut into shapes if desired.
Serve chilled.

Notes

Try different juices or even herbal teas for flavor variety.
Avoid fresh pineapple, kiwi, or papaya unless cooked, as they can prevent setting.
Store in an airtight container in the refrigerator for up to 5 days.
