Ingredients
1 cup quinoa
2 cups water
1 cucumber, diced
1 red bell pepper, diced
1 avocado, sliced
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
Instructions
Rinse the quinoa thoroughly under cold water.
Cook quinoa in 2 cups of water, bring to a boil, then simmer for 15 minutes until water is absorbed.
Let the quinoa cool to room temperature.
In a large bowl, combine cooked quinoa, cucumber, red bell pepper, avocado, red onion, and parsley.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
Pour the dressing over the salad and toss gently to combine.
Serve chilled or at room temperature.
